So, if you’ve been reading my blog you might already know, despite my love for chocolate, sugar actually makes me feel sick. So, aside from every once in a while, I just don’t eat sugar. I don’t even have any in my house. I could write an entire book on my adventures with sugar free baking and cooking, but I think I’ll save that for another post, since I have a lot of other dessert recipes to share this month. While I usually get my daily sweet fix from fresh fruit, sometimes that just isn’t gonna cut it.
I’m not super keen on cake, but I like frosting a lot. I also love things like the above homemade vegan Peanut Butter Chocolate “Eggs”. A lot of these recipes require powdered sugar. It’s no secret that you can make your own Powdered Sugar (a.k.a Confectioner’s Sugar, or Icing Sugar) by blending granulated sugar with cornstarch in a blender. But did you know you can do this with any granulated sweetener, including Stevia in the Raw, Xylitol, Splenda, or whatever?
All you need to it is, in a blender, combine:
1 cup granulated sweetener
1 TBSP Cornstarch (Cornflour) or Arrowroot
FUN FACT: if you use NuNaturals Stevia Baking Blend, you actually don’t even need to put it in the blender, as that particular brand of stevia already has a powdery consistency. You just mix them together in a bowl, which is what I did to make the above Chocolate Peanut Butter Eggs from Chocolate Covered Katie! They were super easy and delicious.
